Rackham is vinified from the Jurançon Noir grape variety. Native to southwestern France, genetically similar to the Folle Blanche (indeed, sometimes Jurancon Noir is called Folle Noir) and Cot. Direct press, 15-day spontaneous fermentation in stainless steel with indigenous yeasts. Notes of savoury, ripe and cooked red fruit, leather, underbrush and game.
