A bit of oxidation allowed before ferment, which is 90% in stainless steel, 10% in older 300L barrels, and 20% of grapes are whole bunch fermented on skins for 2 weeks. This produces an incredibly textural wine, where acidity and richness are perfectly balanced. Zesty, nutty and a little saline, this wine keeps you coming back for more.
