The History

Sophie Valancé and Jean-Yves Domont

Les Vins Mont-Val is a young estate based in Aspiran in Languedoc. Sophie and Jean-Yves first had several professional experiences in Cornas, Fleurie, Forez, Auvergne and Burgundy. The couple then left for Australia where they worked on a biodynamic wine farm. 3 years later, they began a new adventure in New Zealand where they set up their own estate.


After this rich experience which also lasted 3 years, they finally returned to France and it was in 2019 that they settled in Aspiran. 

The Philosophy

In Aspiran, they recovered plots that had been cultivated without any synthetic product for many years. Sophie and Jean-Yves currently cultivate 6 hectares of vines using organic farming. The grape varieties include Cinsault, Grenache Noir, Carignan Blanc and Noir, Cabernet Sauvignon, Clairette and Syrah on clay-limestone but also basalt soils depending on the plots.


In their cellar in Aspiran, winemaking is done with whole clusters or destemmed harvests depending on the vintage and without any input.
