Domaine des Escaravailles’ vineyards extend over 40ha in Rasteau, Cairanna, Roaix, Villedieu and Saint Roman de Malegarde in the Southern Rhône Valley. The vines are farmed ‘in the old way’ (organically) with some Biodynamic principles being applied as well.

Come harvest, the fruit is picked by hand once optimal ripeness is achieved (but before acidity drops off). In the cellar, Gilles and his team ferment with indigenous yeasts in a whole host of different vessels (including new and old oak and concrete) as they seek to achieve complexity and balance in their wines.
