Wine Of Origin
The wine is light bodied, bone-dry and, without filtering or clarification. Straw yellow with greenish hues, it has the very delicate bubbles typical of Frizzante wines, and floral and stone fruit scents accompanied by notes of citrus, yeast and baked bread. The lees at the bottom of the bottle offer the wine softness, mouthfeel and longevity and can be shaken into the Prosecco to give a buttery-spicy flavours. Winemaking: the grapes are crushed immediately and in a gentle manner, and the must is clarified by cold, static decantation. Then the must is fermented in stainless steel tanks with indigenous yeasts. Aging: after fermentation the wine remains in contact with the yeasts in steinless steel tanks for 6 months In Bottle Re- Fermentation: when spring arrives, the wine is bottled. Fermentation finally finishes in bottle, trapping the resulting co2 to create fine, soft bubbles.
