This historic vineyard is named for the Cistercian monks who originally planted vines here in the 11th-12th centuries. This south-facing sight reminiscent of an amphitheater with rich volcanic sediment and pink sandstone. Dry, medium-bodied with lifted aromas of pear and lemon with a fresh, racy palate.

André Ostertag does not confine himself to the traditional Alsatian way of treating the varieties he has in his vineyards. His Pinot Blanc is fermented and matured for 9 months in barriques with lees stirring and malolactic fermentation, all of which contribute to its creamy softness.
