From the most North-Eastern corner of Sancerre, Domaine du Nozay is certified organic and biodynamic. Winemaker Cyril Benoist is a true "terroirist" and vinifies each plot of vines separately in order to better understand and fully express their individual terroirs. Fermented on fine lees in short and stout stainless steel tanks, Cyril waits until late Summer to bottle and another six months before releasing the wine to give it time to develop complexity.
Removed from chilling and decanted for 30 minutes prior to enjoyment.
