Podere Cervarola

The farm "Podere Cervarola" was born from the desire to create an authentic project, fueled by years of studies and great passion for sustainable agriculture and natural enology.

The company was founded in 2015 in Villabianca, near a farm of about ten hectares called "Cervarola", about 300 m above sea level on the first hills of Modena. The land is partly vine to Lambrusco grasparossa and in the following seasons the planting of local autochthonous varieties is planned to enhance the territory and recover past viticultural traditions. The company also produces cereals and is planning to make a small plot of red fruit (goji, raspberries, blackberries).

The grapes are harvested manually and given to the winery where they are trying to make a process of natural vinification. In fact the musts do not undergo any temperature control, no clarification or filtration, no addition of yeast or enzymes. The wine in spring, with a waning moon, is then bottled where natural refermentation will take place. These oenological choices are aimed at recovering the ancient traditions and allow the different vines to express the different organoleptic characteristics and the territory.
